Lemon-Orange Roughy
***When cooking any white fish, be sure the pan is hot before placing fish in to prevent sticking.

Ingredients:

  • 4.5 oz. orange roughy
  • 1 lemon, juiced
  • 1/8 tsp. cayenne pepper
  • 1 orange, juiced
  • 1/2 tsp. lemon pepper

Directions:

Warm non-stick skillet to medium-high heat. Arrange fillets in the skillet, and drizzle with orange juice and lemon juice. Sprinkle with lemon pepper. Cook for 5 minutes, or until fish is easily flaked with a fork. *Garnished with grilled lemon and served over a bed of greens.
