Ingredients:
- 3 cups spinach
- 4 eggs: 1 whole egg, 3 egg whites
- 1/4 cup diced mushrooms
- 1/4 cup diced onions
- 1 cup salsa
- 1 orange
Directions:
Pour the whisked eggs into the skillet and add ingredients. Allow the eggs to cook over medium heat for two to three minutes or until the edges start to become slightly dry. Flip the omelet carefully once it is mostly cooked to finish cooking the top side. Serve salsa and orange on side. (Serving size: 1 omelet. Calories per serving: 186.)
